What’s for Dinner? Chicken & Dumplings with Chocolate Bread Pudding for Dessert!

Well today I am cooking a Cornish game hen, I am probably gonna make Chicken and Dumplings. YUM!

What do you need to make this?
Either 3 or 4 pieces of chicken on the bone, boneless if you prefer, whole fryer or a Cornish game hen.
A pot of water with enough to cover bird or make it float
A mess of Mirepoix (carrots, celery and onion)
Will be using my homemade biscuit recipe for the dumplings.

You can find the recipe here (will open in new window)! I am probably gonna use 3/4 a stick of butter instead of 1 1/2 sticks!

I will be removing the chicken from bones after it has cooked a couple hours, then straining the just to remove any bones you can add the veggies back in the broth, even thicken slightly (your choice). After pouring it in a baking dish I will plop the biscuit dough on top and I will baste the tops with the broth. I may even put a lid on it for a while so the tops do not get to dry and brown.

I let it start cooking while I cut the Mirepoix, you know carrots, onion and celery.

I cut them kinda big cause I’m going to strain it all anyways when I thicken broth with dumplings.  Will add this back in to individual or in the last batch before I put all the dumplings back together with the soup/broth.

All shredded and yes that is the whole bird lol it was a small one.

Everything back in the pot minus any bones and fat or other yucky stuff.

I did season the biscuit dough with powder chicken base, just a little though. I added some parsley, garlic, salt and pepper.  I used around 3/4 of a stick of butter in the biscuits instead of half a stick.

Just plopping them in there, man I hope this comes out lol I never made it like this before!

My sons plate I have to bribe him to eat it lol no video games after dinner if you do not eat!! He hates any gravy type of foods.

I decided to make chocolate bread pudding!

Milk and heavy whipping cream.

    We love Chicken & Dumplings what’s cool is that everyone seems to make it different so it’s always something new! I love all the photos you posted too! And that Chocolate Bread Pudding looks so moist and delicous. I really want some right now.

    I have never in my life made chicken and dumplings, but your recipe looks very similar to my chicken pot pie recipe since I sometimes top it with biscuits instead of pie crust. It looks delicious!
