Chocolate Cupcakes

Chocolate Cupcakes with pudding/cool whip frosting.

This is a yummy recipe and it’s super easy and your family will love them!  Remember when baking not to over bake.  Ovens are different if your cupcakes look done before 20 minutes check them with a toothpick and if it comes out clean they are done!  You don’t want dry cupcakes!

Ingredients needed for the cupcakes
3/4 c all purpose flour
3/4 c bakers cocoa
1 tsp baking powder
1/2 tsp salt
1/2 c butter, softened
1 c, plus 2 tbsp sugar
2 eggs
1 tsp vanilla
1/2 c milk

Preheat oven to 350 degrees

Combine flour, cocoa, baking powder and salt in a bowl and stir until completely mixed well.

Mix butter in a mixer until creamy and smooth around 1 – 2 minutes.

Add sugar and beat for around 4 – 5 minutes.

Add eggs one at a time beating well after each addition.

Beat in vanilla until mixed.

Add flour mixture alternately with milk, beginning and ending with flour mixture. Spoon the batter in to prepared cups.

Bake around 20 minutes or until a toothpick inserted comes out clean.

This should be a 12 cupcake recipe, but I made 24 half sized cupcakes which were perfect!
