Peanut Butter Cupcakes

Peanut Butter Cupcakes

I cannot believe how tender and sticky like a peanut butter cup.  That's how my son explained it. photo P5270401_zpsd2f1e7c3.jpg

Today I made Peanut Butter Cupcakes! I normally am not a big peanut butter anything fan, I mean I like peanut butter just not all the time. I have to really be in a mood for it, other wise I won’t make anything using peanut butter. This recipe is pretty easy and basic, but is a blend I concocted and I’d love to one day have a cook book, but my recipes are already all over the internet! I did not make any special icing, I did cover a few with chocolate and peanut butter chips till melted.  I probably will not make an icing for the cupcakes.  They are that good!

So here we go recipe will start now!

Preheat oven to 350 degrees prepare 18 cupcake papers in pan.

Ingredients:
1/3 c butter
1/3 chunky peanut butter
1/2 c sugar
1/3 c dark brown sugar
2 eggs
1 3/4 c all purpose flour
1 3/4 tsp baking powder
1/4 tsp salt
1 1/4 c milk

Beat butter and peanut butter until creamy, and add sugars and mix well.

Next beat in the eggs and mix until creamy.

This is what the batter looks like after the eggs have been beat in.

Add flour and mix well.

Add milk and mix well

Add remaining flour mix until smooth and creamy.

Fill cupcake papers (I didn’t have enough so I used three ramicans for extra batter).

Bake the cupcakes for 25 minutes.

    Oh we are huge peanut butter fans, it is always on the table, eaten pretty much three times at least a day. These are going to be good, thanks so much for sharing.

    Can’t bake anything with peanut here at home, son is allergic to peanut. That looks good though.
