Delicious Mexican Pizza (like Taco Bell but better)!

This is hubby’s Mexican Pizza

There is nothing I love more than making delicious food at home that beats the restaurants.  Whether it be fast food or dine in food from a nice restaurant!  Chances are you, well I can make it better! 🙂 You can too!  You may need a recipe for some stuff, but I’d say 7 out of 10 times I do NOT use a recipe.  So it does make it hard for me to tell you how to make it.  So I will keep this as simple as possible, because this is something simple!  

What do you need for your Mexican Pizza’s?
This served 3 people with leftovers of shells, beans, meat, cheese and sour cream.
 
Ingredients:
black olives (small sliced can)
roma tomato (diced)
taco sauce or homemade enchilada sauce
soft flour tortillas
oil to fry shells in
refried beans
taco seasoned beef
cheeses you like on tacos I used a mexican blend

Start by cutting up your tomatoes so that is done, fry your flour tortillas till crispy, but not overdone.  Once you have finished the shells go ahead set them aside and cook up your taco seasoned beef.  While beef is cooking open the refried beans and pour in a microwaveable safe bowl with lid, add a little bit of water, and the same taco seasonings you used in your beef.  Mix well and nuke.  once everything has been set up, we are ready to start building.  This night I used taco sauce from a jar.  I start by spreading beans on a shell (lightly), add light layer of beef, small amount of cheese.  Then add the top shell and spread taco sauce (or enchilada sauce) around the top shell stop with tomatoes, black olives and some like green onion, I didn’t use green onion this time, then top with your cheese and some like to add a little more black olives and tomatoes on top.  Oh you have to prepare these on a cookie sheet! lol sorry I forgot about that part.  Bake @ 350 until the cheese is beautifully melted.  I use a meat cleaver to cut the Mexican Pizza’s but my son’s was so thin I could use a pizza cutter.  He’s the pickiest of us all 🙂 I’m the second pickiest lol 

Here are some photos of our yummy Mexican Pizza dinner!  Ohh wait one more thing! This is the important part! When you go to taco bell a lot of people will buy 2 or even 3 items to eat off the menu.  This homemade Mexican Pizza is filling I couldn’t even eat my whole Mexican pizza, neither could Leo and hubby could only finish three quarters of his.  So that’s a big plus you just need one item to eat when you make them at home!

    Holy cow those look deeelicious!
    The last 2 or 3 i got from taco-bell, the shells tasted like they fried them in old oil.
    I’ve tasted plenty of them. Used to manage a Taco Bell in knoxville.
    I always admired the bell. 68 products all made from 7 ingredients. Pure genius!! LOL
