Macarons ~ Fails and Succeeds!

I made some delicious Macarons! 

They did not all come out so beautiful though.  I made them 4 times over a period of 3 days.   I thought humidity could have played a factor so I made sure to do them at different times of the day and night.  The first ones I made were perfect, I just didn’t put them on paper or foil and they stuck.  So they were all cracked up however they were perfect height and texture was almost creamy with the icing in the middle!  They were the ones in the chocolate macaron photos.  

I tried again with chocolate, but I had less chocolate and oh my hands hurt folding for some reason I think its my RA already kicking in.   Anyways the second chocolates were just disgusting I threw them out.  I tried again using a small amount of milk that was infused with star anise.  It was to much liquid to add so it never turned to stiff peaks lol dang it!  Dumped that out. 

One last time for the night, and well these were a bit thicker though and they did turn out good as far as taste and texture.  They were just a little bit too tall, but I liked them.  I made an orange icing with butter, powder sugar, milk and pure orange extract.  Was so freaking good! I loved them!

These were a set I made tonight that failed, although they almost look perfect they were over cooked hollow and super crunchy chewy! They could pull a filling out!

again batch 3 tonight ( the second batch never made it out of bowl the whites wouldnt thicken right.
Finished they are to thick and probably not folded enough. Still Delicious though

    Those are French Macaroons, right? I haven’t tasted one yet and I’ve been craving for them for some time now. There are few bake shops here in Dubai which sell those yummy treats. However, they are a bit pricey.
