Sugar Cookie Cupcakes with Fudgy Frosting!

I love baking and I sometimes can get pretty creative.  This time I have done it, I made some delicious funfetti cupcakes for my sister and nephew’s birthdays.  I didn’t have anything really to make stuff, I am almost out of baking powder and I have no vanilla, bakers cocoa and very little powder sugar.  I did however have chocolate chips which was perfect for the icing.  

Ingredients:

  1. 1 1/2 cup flour
  2. 1 stick butter, melted
  3. 1 cup buttermilk (1 cup milk with 1 tsp vinegar to make homemade buttermilk let sit 5 minutes stir and use)
  4. 1 cup sugar
  5. 3 eggs
  6. 1 tsp baking powder
  7. 1/2 tsp salt

Directions:  In small bowl put flour, salt and baking powder whisk and set aside.  Melt butter and put butter, sugar and vanilla in mixer bowl mix for around 2 minutes.  It won’t be that pretty!  Then add one egg at a time mixing completely, then repeat adding another egg one at a time until eggs are gone.  Next alternate between flour and buttermilk starting and finishing with flour, until all is mixed in.  Makes 12-15 cupcakes! fill cupcake papers and bake for 20 minutes on 350 degrees. 

That’s pretty much it.  The icing was just a hope and it worked.  I used around 3/4 bag of chocolate chips 2 tbsp butter and melted both over double boiler until melted and smooth, scrapped it in to the mixer bowl and I beat it, adding a 1/4 cup milk mixing well, adding some powder sugar a few times. Then a little more milk basically until I liked it.
