Homemade Ground Pork Tenderloin Burgers with Stuffed Jalapenos and more!

I took a chunk of Pork Tenderloin from that long one I cut up to last us a while.  I decided to try and make it into ground pork burgers and since I was making a stuffed jalapenos, I could use the seeds and centers to make a Jalapeno jelly or sauce.  We also had NON GMO corn on the cob, it was locally grown at near by farm.  One of the many things I love about being in the South, fresh untainted veggies and fruits.  When we can afford to buy them.   I try to be creative and learning to be more healthy at the same time.   

I took the guts of the jalapenos and put it in some sweet salad pepper juice and simmered till nice and spicy.  I added slurry of cornstarch and water to thicken it to a sauce/jelly like texture, I did add a drop of green food coloring to make it green. 🙂  

I took a brick of cream cheese, garlic powder, onion powder and a half a brick of shredded cheddar.  Mix well and fill the jalapenos top with a little extra cheese.   Bake at 400 degrees for 20 minutes roughly.  The cheeses will run out a little bit, but still delicious. 

Make ground patties into patty shape and cook like burgers.  Topped the hubby’s with the jalapeno stuff I made and the bottom bun got the cream cheese and cheddar mixture.  He loved it! That’s all that matters 😉  My son on the other hated it.  He’s hard to please and a picky little turdball!

    These patties look really good. Wish I would of been there for dinner. Yummy. Meat grinders are a really nice thing to own. Huh?
