Our Low Sodium Dinner!

It was pretty simple tonight, I sent hubby to grocery store to get us some food for the week and he called and told me how the grocery store had a whole pork tenderloin on sale for like 18 bucks with tax.  I told him Get IT! I was told to not eat any pork by the doctor, but tenderloin is okay!  My guess is because it’s raw and not cured, but who knows.  The package read 4 oz piece is a serving (HA) and it’s 50 mg of sodium.  I thought that’s awesome!  So I cut up pieces of pork to make my own cuts for what I want to do.  I did chops, then fatter ones for butterflying, some trimmings with some loin for hubbys black eye peas.  There was a little bit left over after bagging and freezing that I cooked up.  




I decided to attempt my own italian dressing homemade! OMG lol but I actually did it and it was super simple!  I will tell you exactly what I used.

Ingredients:
2 tbsp white wine vinegar (no sodium)
3 tbsp extra virgin olive oil (no sodium)
1 tbsp lemon juice
1 tsp basil
1/4 tsp oregano
2 minced garlic cloves

Put all the ingredients in a small bowl and whisk, while you are whisking add the extra virgin olive oil in a steady stream until emulsified. This is for a marinade not salad (in my opinion, it’s not like italian dressing till it cooks).

I took my extra cuts of tenderloin and stir to coat completely. Let marinade for around 10 minutes while I got my pan, cut some onions, green peppers and tomatoes plus shredded some lettuce. I add the meat to the pan, not the extra oils. I didn’t put any oil or nothing in the pan, I just used a non stick pan and let cook completely. Then added the onions and green peppers. I stirred it in with the meat and let it just chill in the hot pan.

I removed all of the ingredients from the pan and I left the little bit of juices from the meat and oil that came off the meat and I tossed the lettuce in it, there wasn’t a lot of liquid. For mine I didn’t do this I wrapped my pieces of meat with lettuce. but for his I added the onions and green peppers back to the lettuce and tossed together and then added the tomatoes and plated and topped with the pork loin. Here are a couple photos of our dinners. His is the salad and mine are the wraps.

These are my tenderloin wraps, personally I hate lettuce and most vegetables.  I tasted my husbands lettuce with his meat and was like wow I could do that!  I decided to wrap mine in lettuce and I was like amazed as I ate it all!

This is hubbys Dinner Salad, he ate a peanut butter and banana sandwich too, but not me!
