1st Low Carb High Fat Day!

Today was the 1st day for low carb high fat.  Now don’t get me wrong when I say high fat, I mean good fats! The kind of fats that have been around far before processed high carb foods! Meat, cheeses, eggs and veggies!  Now I was bad today and I couldn’t figure out how to eat spinach leaves. Ewwwww I struggle eating vegetables, but I’m going to try tomorrow.  I will boil some eggs to eat as a snack.

So today We had Cream Cheese Pancakes, My son had something else for lunch besides low carb stuff.  He’s a growing kid he can eat a little differently, but I’m cutting sugars completely for all of us.  For dinner I made a delicious Taco Bake, when I say delicious I mean it was freaking amazing! NO joke! 

The Taco Bake was as fresh as can be! I put a nice bit of beef through my meat grinder to make my own burger for dinner.  I also added green, red peppers and onions.

It smelled like taco before I added seasoning at all, I cooked it up and added salt, garlic powder, chili and cumin.  I let it all cook together for a little bit, then poured taco bell bottle of taco sauce with no sugar and 0 carbs.

 Topped with cheese and black olives then set aside.  I made the oopsie bread and put it out on my non-stick pastry mat and baked it.  When it was done I was able to pick it up and set it right on top of the pan of taco meat mixture.

After I put the oopsie bread on top I added a little cheese and more taco sauce.  I put it in the oven on broil for a short time around 4 – 5 minutes till bubbly and getting brown around the edges.  It was so freaking good! My husband gave me a hard time cause he has to eat, like we all don’t……  I guess cause he has a strenuous job he’d starve on a diet.  I told him trust me, man! I got this! He loves my cooking and should have just trusted me from jump!  He devoured it! We all did!

We even had dessert! You heard me dessert and it was decadent and delicious!  It may not sound like it, but it was! I had a box of sugar free chocolate pudding and instead of using milk to make it, I used half the amount of heavy cream and a little water to make it.  It was instant so it whipped right up.  I made a bit of whipped cream and sweetened with a packet of stevia.  Then to wrap it up I made the cream cheese pancakes and I added some Toll House Bakers Cocoa which had no sugar and only 3 carbs(split between three of us).  It was so good my family enjoyed all of the meals today, as did I! I will add the exact recipe for the Taco Bake tomorrow, it deserves it’s own post.  For now check out this dessert!

I also will add after my first week if I lose weight what my weight is now and what I lost, as well as keep weekly updates.  Enjoy and hope you try some of these amazing entrees to!  I didn’t take in no more than around 17 or 18 carbs for the day and 0 sugars!

    My oh my, your dinner looks droolicious! My husband wanted to buy me a meat grinder but I said no, I should have said Yes lol.

    That Taco Bake sounds delicious. I have to watch my carbs because I am diabetic-but everyone should watch anyway. I’ll be interested to hear if you have lost weight from switching up how you eat.

    Sounds awesome. Looks pretty tasty too. Love you got a meat grinder. You will find you can do all kinds of stuff with that. I will for sure have to try some of your recipes.

    You always post delicious food. The pancake looks soft and tasty. I love hard boiled egg too and I usually eat it as a snack. It fills the stomach.
