Day 2 Low Carb High Fat! Well it’s Day 3, But I’m Late!

So yesterday for my second day on this new way of eating I made the same pancakes for breakfast and I took out chicken for dinner.  I searched recipes and everything to decide on something.  The site that I been using shows you how many carbs and stuff is in the meal.  It also shows you if the recipes are Induction Friendly which is what I’m doing right now.  The site is Your Lighter Side!  I came up with my own idea though this time.  I will use that site to base my recipes from as well! I did like and use the oopsie bread, I just changed the quantity of the ingredients.  

For dinner I took two chicken breasts cut into several smaller pieces and I beat them flat.

In the meantime while I’m beating the meat flat I have mushrooms, onions, green, red peppers, garlic and spinach.  I also had 4 oz of cream cheese (half a block) set out to get soft.  After the veggies were finished cooking I let the cool down almost completely and then I use a plastic spoon, the ones like a wooden spoon.

 I mashed the cream cheese and got it finally well incorporated.  I could have used the mixer but I just didn’t want to beat it down.  I filled the flat chicken with just a little bit and rolled, placed in pan that I lightly oiled with EVOO.

I baked it at 350 degrees for around 30 minutes.  While that cooked I slow cooked on top the stove some more mushrooms, onions, peppers and brussel sprouts.  They cooked as long as the chicken did just at a much lower temp.

I really don’t care for the brussel sprouts, but I’m trying to eat these veggies.  I have never liked them I always thought when my husband would eat lettuce, tomato, pickle, onion, mayo all on a burger kinda like a whopper.  We make them at home though I thought how good it smelled I decided to taste it…. lol lets just say I didn’t do that again.  It was the worst taste I could have imagined ever, no I can stomach some lettuce.  But tomato that is a whole different story.  I hate tomato like I hate peas! It’s really hard to get them veggies down.  I can eat the raw spinach though, it’s okay!

This was the outcome minus the brussel’s I just couldn’t eat them.  Although this was just a smaller piece of chicken I took photos of after slicing it to show you guys how it turned out.  The brussels turned out just like they look up there in the pan. 

Later I did make us a little dessert that was totally sugar free! I took 12 tbsp of heavy cream and whipped it with around a quarter package or so of sugar free orange jello.  OMG it was so good! I didn’t take a photo though.  It was later and my kitchen was a wreck still LOL yep and it was till I got up this morning.  By the time I’m done doing all my dishes in the day I get dinner cooked and I’m done! unless I get a wild hair up my butt and just get to it.  

It is Wednesday and the third day now.  I just didn’t post this yesterday I was just not up to it.  Oh I did weigh myself today and well to my surprise I did see a small difference already! I was really shocked it showed 3.2 lb difference.  I weighed my son to check him again too and he showed a 2 lb loss as well.  This is Freaking Amazing! I cannot wait till this next Monday! I’m so excited! I think that cutting the sugar out is what is really doing it and the fact of cutting out the carbs!

    Yup sugar is a bad culprit. MY husband used to make pitchers of tea everyday and he was using regular sugar, I told him that I bet if he cut on tea he would lose weight and he has been losing since he stopped making tea plus he work out a lot nowadays. I would like to know how you make your chicken? Aghhh tomato and peas? I love them lol. I love veggies of al kind but not brussel’s because it is bitter to me.

    I didn’t too much like the look of the cream cheese and spinach. Now the Brussel Sprouts on the other hand would work. They look really good. Love my veggies.

    That chicken recipe looks delicious. I really want to try it! I am not a huge fan of cooked veggies either but tomato is one of my all time favorites. I can eat them just about any way!
