Swiss Buttercream
- 1/4 C Sugar
- 1 Large egg white
- 6 TBSP Softened Butter
- 1/4 TSP Vanilla
Whisk egg whites and sugar in a big metal bowl or over simmering water until you dont feel sugar between your fingers if you touch it and rub them together. Tranfer to mixer until it turns white and doubles in size.
Add Vanilla, finally start adding butter a pat at a time.
NOTE: Don’t Panic if it looks like its not coming together, just keep mixing.
Some added info I had no vanilla so I put in about 1/8 cup of bakers cocoa and made chocolate swiss butter cream with this recipe! It was mild chocolate!
