Chicken Parmesan for dinner!
My family absolutely loves Chicken Parmesan for dinner every now and then. It’s not something I make all the time, usually when I make the perfect spaghetti sauce. It’s always slightly different and sometimes it’s just so much better and this was the case.
I had in my freezer some Springer Mountain Farms Organic Chicken. I use their brand because honestly it’s the best! I breaded my chicken using 1 hamburger bun I put in the toaster and toasted good but not burnt. Let it cool completely. Add the bun to the food processor, some instant potatoes, seasonings (italian seasoning, salt and garlic) and parmesan cheese. I did the normal dredge in flour, then egg & water mixture and to the breading. I did deep fry the chicken part of the way to get a crisp outer side. I baked on a rack the rest of the way and when it was just about done I removed the rack and placed chicken on the pan directly and added my cheeses and poured a little sauce from yesterday’s spaghetti on top (after warming it up and thinning it out some), put in the oven and baked until cheese was melted. And this is the final product it was so good! and easy. Even if it seems like a lot of steps it is so worth it!
