Today’s Menu? Hmmmmm!
I know for sure I’m going to make Ham Salad for Hubby’s lunches, I was supposed to do it yesterday and well I just didn’t feel like it. Especially after all of the dishes I had to do and still have more out there again! Them damn dishes never end, I used to love using a dishwasher, but I decided I hated it. My dishes were never coming clean, at least not as clean as I want them. Which is Clean! The dishwasher in our home is also in need of replacement. We rent and well let’s just say the landlord isn’t too concerned with it and honestly it’s petty to me too. I have two hands that can wash dishes faster than any dishwasher can in the one to two hours it has to run to wash a single load. I can bust sud’s with a quickness! lol
I can make several things, I have numerous kinds of different meats. I think I’m going simple tonight though and I’ll make a sauce and a bag of frozen cheese ravioli and some garlic bread. The reason is because I will be busying myself with my new Meat Grinder my mom got me for Christmas. I will be looking up recipes too, I have the basic idea of what goes into the ham salad. I just want to get any ideas that I may not have thought of that hubby will like. I am only doing this for him as I’m not big on sandwiches made from a spreadable meat! lol Just not my favorite.
We still have that delicious cake I cut last night for our dessert. I made it from scratch I will share the recipe and a photo.
Chocolate Cake Recipe
Ingredients:
2 c sugar
1 3/4 c all purpose flour
3/4 c bakers cocoa
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1 c milk
1/2 c butter, melted
2 tsp vanilla
1 c hot water
Put all dry ingredients including sugar in mixer bowl, add all wet ingredients EXCEPT the hot water. Beat for a couple minutes until mixed and add hot water and the batter will be very thin. Pour into cake pans or cupcake papers. Bake for 30 – 35 minutes or until a toothpick poked in comes out clean.
Cannoli Cake Filling
Ingredients:
3/4 c ricotta
1 brick of cream cheese
1 c powder sugar
1 tsp vanilla
1 tsp cinnamon
Put ricotta and cream cheese in mixer and beat until creamed together well. Add powder sugar, vanilla and cinnamon and mix until combined, be sure to scrape down the sides. Put in the fridge till ready for use!
Icing
Ingredients:
1 stick butter melted
2/3 c bakers cocoa
3 c powder sugar
1 tsp vanilla
Melt butter and put in mixer bowl, add bakers cocoa and mix until it looks like melted chocolate. Add vanilla mix in and add powder sugar and milk alternately. I did it in 3 pour’s of powder sugar, 2 or 3 pour’s of milk. Beat until it’s beautiful and then frost your cake.
Depending on the layers, you can make this cake in 3 layers that are thinner or 2 layers like I did. Either way unless you have a filling for between the layers I’d suggest doubling or possibly tripling the recipe for icing. When I made a single batch of it, there was just enough to frost outside ONLY of a two layer cake.
I love baking and making desserts, now don’t get me wrong I also love making great meals. I have made beef wellington and that was amazing. I’m sure it wasn’t exactly right but it was so good. I would like to try making it again, but I have to find the right kind of meat. I like a tender meat, not too tough or chewy, I mean who does? lol No one!
I would love to take a class for decorating cakes! I have always loved making cakes and decorating them, it’s just been one of them things I could do. I even made my own wedding cake back in the day and yes it was a two tier cake with a beautiful topper. I bought everything from a store called Heinrich’s Decorating Nook in Center Line Michigan, it was close to home for me back then. Now I live in Alabama though so it’s almost 1000 miles away! 🙁 I really miss going to their store. They had everything you could think of! I could even buy the buttercream already made and it was good! I have since learned how to make an amazing buttercream and in a variety of flavors from chocolate, almond, cherry vanilla, mint and more! Buttercream is a very versatile icing and it can have several types of flavor additives!
When it comes to icing though I go with a straight buttercream, whipped cream icing or that chocolate recipe listed above. That icing recipe I listed above with cake is an amazing chocolate icing. I mean it’s delicious! You do not need this to be a thick icing when its on the cake or it will be to much! You will need a glass of milk or whatever you like with cake! Vanilla Ice cream goes with it really well, you can take vanilla bean or plain vanilla ice cream and melt it down and it’s basically creme on glaze.
We recently bought that ice cream maker you shake, I forget the name of it. It makes the smallest amount of ice cream, but it works. My son loves it I only mention this because it makes the perfect small amount to make with a slice of cake! While I mention that ice cream thing, we also bought the slushie make that day too. That didn’t work so good, you seriously have to put like a 1/4 to 1/2 cup of liquid to start to even get a little bit slushed up. My son liked both though, even though the slushie makes such a small amount. You do have to freeze the cup for 6 hours before adding any liquid to it. I would recommend the ice cream maker, but not so much the slushie. Now this isn’t a review either just an opinion.
