Another Low Sodium Dinner!
So I have to try and figure out what to make each day, because this is all new to not add salt to my food. Believe it or not salt being removed really changes the foods flavor. I am very sad, but working on making myself happy! I am learning how to use other seasonings and liquids like white wine vinegar, extra virgin olive oil and lemon in ways to add more flavor to my food without the need of salt.
The meal I made tonight consisted of Baked chicken with around 1/2 cup of breadcrumbs to coat 2 large chicken breasts that I cut into small pieces and strips. I didn’t use egg or flour in this chickens crust, just the breadcrumbs. I also didn’t season the chicken at all, which was a mistake. Normally I would use salt, seasoning salt or something with salt. I placed chicken in 2 13×9 pans and baked around 25 to 30 minutes on 400 degrees. The sides consisted of yes a stick of sodium free butter for flavor, it was real butter so it’s a good fat! Good fats are okay like anything in moderation and it’s not like I ate all the potatoes and green beans myself. So I heated the green beans with some butter and made some hungry jack potatoes they have only 20 mg per serving! I didn’t even have a full serving size! So our dinner divided was roughly 500 mg of sodium.
I thought I did so good yesterday, today will be a challenge lol! Mom is coming by and bringing Arby’s, So I right away went to their menu and checked it all. I got 2 Roast Beef Jr’s No fries because they are always too salty. So that is roughly 1000 mg if I eat both, I may eat one and save the other for hubby later as a little snack. The juniors are small.
So during this awesome new life change of low to no sodium I have also managed to lose about 10 lbs, I guess it’s because I cut the pop out entirely! I haven’t had a drink of pop (Dr. Pepper was my weakness) since Last Sunday April 27th 2014 and I have no intentions of picking it back up again, Ever!

Luckily for me I have never liked the taste of salt! It is rough giving up anything you are used to–for me sugar and watching carbs once I was diagnosed diabetic.

I’m not one for salt either, I tend to have as little as possible. I think its because I watched my mom cover her meals with salt while growing up.
