Coconut Curry Chicken & Broccoli!
I made some chicken yesterday for chicken salad for my low carb diet! I diced it all up after it cooled and only seasoned with a little bit of garlic powder and black pepper. It was a good amount of diced up chicken, so I put some aside for the hubby for dinner. I already ate 2 ounces of the chicken with my fatty coffee. So I saved the liquid that was in the pan from cooking that chicken and I cooked it in coconut oil. So I added it to the pan and added 1 tbsp of butter and 2 tsp of Tropical Traditions Coconut Cream Concentrate a sprinkle of curry powder. Not a lot of curry but enough to taste. Stirred the chicken into it coating it then adding broccoli and stirring it to get it coated as best as I could. I covered and simmered. ( used frozen broccoli so it had to cook ) I stirred every few minutes to coat the broccoli more with the sauce. Once it was done I put it on a plate and served it to the hubby. I had a burger with less than a 1/4 serving of cheese with mayo and mustard and NO bun! Doing Atkins! #LCHF
Here is what the hubbys dinner looked like. He really liked it! So I will make it again for him when I dice my next chicken for chicken salad.
