Ingredients:
3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all-purpose flour
Directions:
Preheat the oven to 350°F (175°C).
With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl.
Mix in the sugar, egg, and vanilla.
Sprinkle the baking soda and salt over the mixture and mix in.
Add the flour last, mix.
Mix well until combined.
I also added about a 1/4 cup to a 1/2 cup of chocolate chips.
Pour mixture into a buttered loaf pan. Bake for 1 hour.
Cool on a rack.
Remove from pan and slice to serve.
Yield: Makes one loaf.

I was literally about to throw out 3 bananas that had gotten over ripe. I’m going to take your post as a sign that I’m supposed to make banana bread tomorrow.

That looks so good! I was thinking I had all the ingredients to try it out, but I checked the fridge and I’m missing eggs. Aaargh!!! It sucks because it only asks for ONE egg. LOL My king loves bananas and he loves bread so I think this would be the perfect bread recipe to try at home to see if he liked it. I’m joted down on the fridge board to buy eggs and try this recipe. It seems fairly easy and that loaf really does look great.
